I'm using Media Player Classic HC (MPC-HC) and I want to know how to make it play in mono sound output instead of stereo.

Derived from the German version: Go to View >> Options >> Internal Filter >> Audio-Switcher >> Activate Internal Audio Switcher (Restart!) >> User-Defined-Channels >> Mark all speakers on all channels (if you want to mix them up) or choose your dominant input channel. Don't forget to switch off normalization, which is set to 400% by default.

As noted in the comments, you might need to check a box saying "Enable custom channel mapping"

MPC-HC v1.7.8

1. Go to View
2. Options
3. Internal Filter
4. Audio-Switcher
5. Enable built-in audio switcher filter (requires restart) 
6. Enable custom channel mapping
7. Click the choose your dominant input channel

P.S Don't forget to switch off normalization
